Brie Croustades with Black Caviar

Makes 24 Ingredients:
Cut rind from cheese using a small sharp knife. Discard rind. Let cheese sit at room temperature for 30 minutes. Preheat oven to 350 degrees Fahrenheit. Put eggs in bowl of food processor. Cut cheese into 1-inch pieces and add to eggs. Process until very smooth and thick, about 1 minute. Spray two 12-cup, 2-inch diameter nonstick muffin tins with nonstick vegetable spray. Spoon 1 tablespoon cheese mixture into each muffin cup. Bake for 9 to 10 minutes, until croustades are well puffed and golden. Let croustades sit for one minute, then remove from tins using a small flexible spatula. Top each slightly warm (or room-temperature) croustade with 1 teaspoon caviar. (Before topping with caviar, croustades may be rewarmed. Place in pie tin, cover with foil, and heat for three minutes in 325 degrees Farhenheit oven.) Serve within 20 minutes. Optional garnish: Cook one extra-large egg in boiling water for about 8 minutes, until hard-boiled. Let cool. Finely chop egg white and sieve the egg yolk.
