(CNN) -- Warm days and cold nights provide just the right climate for drawing
sweet sap from Maple trees. In New England, the smell of the sugary substance
being boiled down into syrup fills the mountain air.

Crowley traveled up to Fairfield, Vermont to document a process in which
horses are used to carry the brimming buckets back down to the farm. There it is made into a tasty liquid gold that attracts tourist dollars for the rest of the year.
