(CNN) -- Learning about local food customs can be a fascinating part of world travel. A special trip organized by Oldways Preservation and Exchange Trust brought food professionals together in Puglia, the region in southern Italy in the heel of the "boot."
Some of the sights: In the coastal town of Bari, fisherman throw octopus to the ground to tenderize the meat; in Altamura, breads are baked in wood fired ovens. In the fields of Puglia, durum wheat for pasta dough grows tall. Join CNN Travel Now Correspondent Carolyn O'Neil for the journey.
